At Azteca Milling, we make quality masa flours from 100% whole grain corn using a traditional process called nixtamalization. Thousands of years ago, inhabitants of the Aztec and Mayan empires would nixtamalize corn to soften its outer hull before grinding it into dough, which inadvertently enhanced its nutrition profile with calcium, niacin, and protein.
